Foods loved by locals: Heading the list of ramen ranking of Hokkaido region – Saimi in Toyohiraku, Sapporo City

LIFE & STYLE

Any towns and regions in Japan have one or two exquisite foods, which have been loved and evolved by locals.

A specialty dish that has been developed to adapt to particular environment has distinctive flavor not found elsewhere. It is like a treasure for local people.

From among many well-known restaurants across Japan, we introduce “Saimi,” the ramen restaurant in Sapporo City, Hokkaido. Its Sapporo-style miso ramen, the ramen with soup seasoned by soybean paste, has been and still is ranked the best in online ramen ranking of Hokkaido region for long time.

・The nearest station is Misono Station on the Toho Line
Saimi has a location in Toyohira-ku, where is outside the center of Sapporo City. This restaurant is not easy to access for tourists, but its miso ramen is well worth a visit. From Sapporo Station, take the Toho Line bound for Fukuzumi Station. Get off and take 5 minutes walk from Misono Station.

・Roasting aroma of soup
When a ramen is served, try soup first. Soup consists of many different kinds of savory flavors. Soup base brings out the thick taste of pork bone, dried sardines and vegetables. Soybean paste adds tender taste. Bean sprouts that are stir-fried in lard add roasting aroma and richness.

・Smooth and chewy noodles
Excellent soup clings well with curly noodles. It seems like that the noodles were developed to be the best possible in combination with miso soup. All characteristics of the noodles - smooth and chewy texture, taste and aroma of wheat – go too well together. Also Chinese bamboo and sprouts are cut into pieces of the same thickness as noodles. This extra process gives depth of flavor when vegetables are eaten with noodles.

・Succulent slices of roast pork
After a sip of soup and a bite of noodles, have a succulent slice of roast pork. Harmonized mixture of juice and miso soup comes out on every bite into tender meat. Maybe it is good to mix grated ginger on roasted pork in soup at this point.

・Order ramen with rice
Saimi serves not only exquisite ramen but also rice. It uses delicious rice harvested in Akaigawa Village of Yoichi District, Hokkaido, one of affiliates of the NPO “Most Beautiful Villages in Japan.” Each grain of rice becomes plump and sleek when cooked.

It is good to make original miso ramen bowl by placing a slice of roast pork on top of rice.

In addition, pour miso ramen soup over the bowl and finish the dishes.
